I am closing in on my first year being GF. In reflecting on this year I notice that I have more energy than I’ve had in years, I’m starting to do 5ks on the treadmill, I’ve lost weight for probably the first time in my life, and I have a positive outlook on life. Other facets include: Meyer and my fabulous adventures, cooking with confidence, baking experiments, and Violet Meyer. Things are great.
Becoming gluten free was not an easy decision, as I’m sure it isn’t for a lot of people. When you are given the diagnoses of Celiac, you know that there is not other option than to change your lifestyle and eating habits. I will say that I could have never imagined that going gluten free would make such a positive change in my life. Of course it was hard at first and although I still make silly slip-ups (more about those in future posts), I can say that I’m glad I did it.
Meyer and I are looking forward to sharing our adventures and always keeping it gluten free.
